Chaurice is a sausage found in the Cajun area of the State of Louisiana in the United States of America. It is a coarsely ground pork sausage which may or may not be smoked.

While the name chaurice is apparently a Gallicization of the Spanish word chorizo, the sausage itself is quite different from the sausages known by that name in Spain and Mexico.
