Paia de Lombo de Estremoz e Borba is a Portuguese smoked sausage. It has been given PGI protection under European Union regulations. It is made from a whole pork loin (taken from the Alentejo breed of pig, to which are added salt, water, sweet pepper paste and dried garlic cloves. After a two day maturing process it is divided into two halves, lengthwise, with fat put between the halves.
