Paiola is a Portuguese smoked sausage made with a combination of pork shoulder and flank cut into relatively large pieces and seasoned with ground pepper, wine, salt, spices, and preservatives. It has a reddish brown color and is made in an irregular oval shape with length varying from 15—20 cm (6—8 in), approximate diameter 120 mm (4¾ in), weighing 1.2 kg (2.6 lb).
